Guests can help themselves to produce in the orchard, fruit area and kitchen garden but soon there wont be anything around. So I have decided to cook up a few bucketfuls of apples to pop in the guests freezer for a taste of sunshine in the cosy winter months.
I presume most people know how to make a crumble so here is a recipe for quick apple cake.
150 g butter melted
2 cups apple stewed
1 cup sugar
2 cups self-raising flour
2 tsp baking powder
2 tsp ground cinnamon
1/2 cup mixed nuts chopped optional
Place all ingredients into a bowl. Stir until well combined
Add nuts or raisins if desired
Pour mixture into a spring form tin (or normal tin lined with grease proof paper) and bake for 40-45 minutes at 140C
